TV chef James Martin has shared his "best" roast potato recipe, which can be prepared in just six easy steps. The recipe requires only three ingredients, making it an ideal accompaniment to your Sunday roast.
With the festive season fast approaching, you might want to give James' recipe a go for the big day. The celebrity chef assures that his method is "foolproof" and guarantees crispy potatoes "every time".
According to James, the preparation of his potatoes takes less than 30 minutes, and they can be cooked within 30 minutes to an hour.
The recipe serves six to eight people, but adjustments can be made as needed.
The three ingredients required are 10 large King Edward potatoes, 50g of lard, dripping or vegetable oil, and two pinches of salt.
Firstly, peel and cut your potatoes into large chunks. Preheat your oven to 200C/180C Fan/Gas 6. While the oven is heating up, it's the perfect time to start boiling the potatoes.
James advises simmering them in a large pan of boiling water. This should take around four to five minutes, or until the potatoes begin to soften on the outside.
The third step involves draining the potatoes thoroughly in a colander and then briefly shaking them. This can be done either in the colander or a pan, as it helps to roughen up the edges of the potatoes.
In his recipe shared with the BBC, the fourth step involves melting the lard, dripping or vegetable oil in a deep flameproof roasting tray on high heat. Then, it's time to fry the potatoes on each side until they start to brown.
The fifth step is to sprinkle two pinches of salt over the potatoes and roast them in the oven for 30 minutes or until they begin to colour.
James' sixth and final step is to turn the potatoes and return them to the oven for another 20 to 30 minutes, or until they are golden brown and crisp.
An additional tip for this recipe is to enhance the flavour of the potatoes by adding a few whole garlic cloves. You can also add sprigs of thyme or rosemary to the roasting tin before they go into the oven.
